Appa (Egg Hoppers) from Sri Lanka





Travel Bite: My favorite local dish from Sri Lanka is called Appa (Egg Hoppers). It's like a very thin pancake with coconut milk (or crispy crepe) cooked in a rounded pan, where they cook a Sunny-Side up Egg inside. It is so good with a western breakfast like bacon and sausage, but it also goes really well with local dishes like lamb or mutton curry (not pictured) which I ate every other day at the hotel breakfast buffet when I was there. Definitely a Must Try if you find yourself in Sri Lanka.
